Roasting and baking tray.

The roasting and baking trays are made from heat conductive aluminium and guarantee optimal browning by contact heat. A special non-stick coating prevents the products from sticking.

It is suitable for:

  • Whole fish or fish fillets
  • Croissants
  • Bread rolls
  • Danish pastry
  • Seafood
  • Breaded products

Do not use abrasive objects to clean the tray. Nylon brushes or other plastic brushes are suitable for cleaning. It is also possible to clean the tray in the dishwasher using commercially available cleaning agents.

Do not use dishwashers with granulates.

CombiFry®.

The CombiFry® allows for the first time large quantities of pre-fried products to be prepared. It completely eliminates the cost of buying, storing, and the disposal of fat and will significantly reduce your working time.
The RATIONAL CombiFry® allows the healthy preparation of pre-fried products with up to 40 % less calories and 95 % less fat.

The maximum load quantity depends on the appliance version, for the CombiFry® 1/1 GN for example, it is 1 kg.

To achieve optimum cooking results, only load a max. of every second rack.

The easiest way to clean the CombiFry® is in the dishwasher or by hand.

Suitable for pre-fried products such as

  • French fries
  • Croquettes
  • Wedges
  • Calamari rings
  • Spring rolls

CombiGrill griddle.

The CombiGrill® griddle gives you a perfect grilling pattern on pan fried food, fish and grilled vegetables without having to turn or monitor the food. It is so easy to prepare large quantities of food to the highest quality.

The RATIONAL CombiGrill griddle is available as 1/1 GN.

You should not exceed the maximum load quantities indicated below if you want to achieve optimum results:

  • Model 61: 3 CombiGrill griddles, 8 steaks on each griddle, total of 24 steaks
  • Model 62: 6 CombiGrill griddles, 8 steaks on each griddle, total of 48 steaks
  • Model 101: 5 CombiGrill griddles, 8 steaks on each griddle, total of 40 steaks
  • Model 102: 10 CombiGrill griddles, 8 steaks on each griddle, total of 80 steaks
  • Model 201: 10 CombiGrill griddles, 8 steaks on each griddle, total of 80 steaks
  • Model 202: 20 CombiGrill griddles, 8 steaks on each griddle, total of 160 steaks

The perfect grilling pattern is achieved if your products have the right thickness (1 cm) and a low temperature (ideally at fridge temperature) when you start cooking.

No. The exceptional heat conductivity of the CombiGrill griddle makes preheating superfluous.

Steaks, fish and grilled vegetables – fresh or from frozen.

When preparing grilled vegetables, it is recommended to grease the griddle to ensure an improved flavour. It is not necessary to grease the tray when preparing meat or fish.

Grill and pizza tray.

With the special grill and pizza tray from RATIONAL with its excellent thermal conductivity, you can prepare pizzas (fresh or convenience) just like a professional. The reverse side of the tray is suitable for grilling steaks, vegetables or fish. The grill and pizza tray has perfect non-stick properties. It is also extremely durable and will last for a very long time. The TriLax® non-stick coating supports browning and is best suited for use at temperatures up to 300°C.

The grill and pizza tray must be preheated before use.

The maximum load quantity depends on the size of the product:

  • grilled vegetables on every rack,
  • larger goods on every second rack.

Chicken Superspike.

Chickens are arranged vertically on the Superspikes, creating particularly succulent breast meat combined with crispy and uniformly browned skin.

The Chicken Superspike is suitable for all types of chicken in various sizes. Depending on the size of chicken you want to roast, the following Chicken Superspikes are available:

1.8 kg: H6 1/1 GN
1.3 kg: H8 1/1 GN
950 g: H10 1/1 GN

Multibaker.

The Multibaker is suitable for preparing large quantities of fried eggs, omelettes, rösti, and tortillas. The special non-stick coating ensures that the food will not stick. The TriLax® non-stick coating supports browning and is best suited for use at temperatures up to 300°C.

Ideal for:

  • Fried eggs
  • Omelettes
  • Swiss potato rösti
  • Tortillas
  • Tartelettes

For better flavours, we recommend slightly greasing the Multibaker moulds.

Potato Baker

With the unique Potato Baker by RATIONAL, you can prepare baked potatoes or corn on the cob without aluminium foil and up to 50% quicker.

The Potato Baker is ideal for baked potatoes and corn on the cob.

The Potato Baker is easy to clean in every commercially available dishwasher.

UltraVent®.

The condensation technology of the UltraVent® absorbs and dissipates steam. UltraVent® Plus is additionally fitted with a special filter technology. This prevents both vapours and the lingering smoke that builds up while grilling and roasting.
There is no need for complicated and expensive installations to remove exhaust air and no need for an extra connection to the outside. Installation is simple and it can be retrofitted at any time.

We recommend cleaning the filter elements and the vacuum room behind at least once a week.
Note: Risk of fire if the filters are not cleaned.

Instructions:

  • Use a screwdriver to release the locking mechanism on the right-hand fat filter
  • Slide the fat filters upwards (the right-hand filter first)
  • Pull the fat filter at the bottom forwards and remove from the hood
  • Filters can be cleaned in the dishwasher

Follow the steps above in the reverse order to re-insert the filters. Otherwise no further cleaning is required.

  • The LED lights up with the arrow pointing downwards if the pre-filter is soiled (behind the fat filter).
  • The LED lights up with the arrow pointing upwards if the main filter is soiled (on the top of the UV Plus).
  • The LED lights up displaying “Error” if one of the two filters is not inserted or recognised.

The pre-filter and the main filter must both be replaced if the soiling cannot be cleaned.

The VDI 2052 does not apply to the RATIONAL UltraVent® and UltraVent® Plus because this directive is intended for ventilation equipment, i.e. supply and exhaust systems. The RATIONAL UltraVent® and UltraVent®Plus can always be used if sufficient supply and exhaust air is available or if the full connected load of the kitchen is below 25 kW, in accordance with VDI 2052.

The RATIONAL UltraVent® or UltraVent® Plus reduces the relative humidity to approx. 37 % to 40 %

The RATIONAL UltraVent® or UltraVent® Plus features an exhaust air opening on the top. This clearance is recommended for safety reasons.

The UltraVent® or UltraVent® Plus can be retrofitted to all SelfCooking Center® and CombiMaster® Plus appliances, models 61, 101, 62, 102 and 201 electric as well as to 61 and 101 gas.

Gas appliances require a different UltraVent® than the electric appliances. When installing gas appliances, the exhaust air generated during gas combustion must be allowed to escape through a vent stack or into the open.

The UltraVent® condensation extractor hood can be used with all SelfCooking Center® and CombiMaster appliances, models 61/62/101/102 and 201 electric as well as with SelfCooking Center® and CombiMaster®Plus 61/101 gas. The UltraVent® can also be used with the Combi-Duo electric (61E on 61E and 61E on 101E). To install an UltraVent® on a Combi-Duo 61E on 61E, we recommend using a stand for the Combi-Duo model 61/101 due to the low height.

Core temperature probe.

General:

  • 6-point core temperature probe is intended for the SelfCookingCenter®.
  • 2-point core temperature probe is used in the CombiMaster®.

At the thickest point, slanted at a 45° angle.

You can cook with the core temperature probe in the iLevelControl. The 3-point core temperature probe is suitable for this.

A product is ready when a certain core temperature has been reached. The 6-point recognition system measures the exact core temperature and interactively adjusts the cooking process.
